Strawberry Banana & Mint Smoothie

Ingredients:

4 tbsp. RX Nut Butter Maple Almond Butter

1 banana

1 cup frozen strawberries

3 oz almond milk

2 sprigs mint

1/2 cup ice

Directions:

1. Mix all ingredients in blender adding the RX Nut Butter last.
2. Start the blender on the lowest setting and allow all ice to be properly blended (about 30 seconds).
3. Blend on high for an additional 60 seconds.
4. Pour and top with a mint leaf.

Baked Oats

Ingredients:

1 packet of RX A.M. Cinnamon Spice Oats

1 tbsp almond flour

1/2 ripe banana

1 egg

1/4 cup plant-based milk of choice

1/2 tsp baking powder

1 /2 tsp vanilla extract

1/4 tsp cinnamon

Pinch of sea salt

For swirl topping: RX Nut Butter Maple Almond Butter

Directions:

1. Preheat oven to 350 degrees.

2. Add all ingredients to a blender and blend into a smooth batter (you can leave some bits of oats unblended for texture).

3. Pour batter into an oven safe bowl, ramekin, or small baking dish.

4. Swirl @rxbar maple almond butter around the top of the batter.

5.Bake for 25 minutes and enjoy!

Maple Almond Butter Pecan Pie

Ingredients:

2 tablespoons RX Nut Butter Maple Almond Butter

1 cup light brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 cup chopped pecans

1/2 cup (1 stick butter), melted

2 tablespoons milk

1 tablespoon all-purpose flour

1 1/2 teaspoons vanilla extract

1 9-inch deep dish pie shell, unbaked, or homemade pastry

1 cup pecan halves (edited)

Directions:

1. Preheat the oven to 325 degrees F.
2. In a large mixing bowl, mix the brown sugar, granulated sugar and eggs until creamy.
3. Add the chopped pecans, melted butter, milk, flour, RX Maple Nut Butter, and vanilla extract and stir to combine.
4. Pour the mixture into the pie shell.
5. Arrange the pecan halves on top of the pie in a circular pattern.
6. Bake the pie for 55 minutes. Check for doneness by shaking the pan slightly. The pie should be firm with only a slight jiggle in the center. It will set more as it cools.
7. Optional: Serve topped with vanilla ice cream or with a dollop of whipped cream.
